Scripture Sunday, April 30, 2017

Surely he hath borne our griefs, and carried our sorrows: yet we did esteem him stricken, smitten of God, and afflicted.

But he was wounded for our transgressions, he was bruised for our iniquities: the chastisement of our peace was upon him; and with his stripes we are healed.

Isaiah 53:4-5

I began my journey to health because I was so sick, I needed to find some way to relieve my pain and suffering.

Before I started, I had 4 strokes, 3 back surgeries, and had broken my back 3 times. I was, as the cliché goes, sick and tired of being sick and tired.

I first tried a paleo diet, but it nearly killed me. I began to lose so much weight,  and my doctor told me I was dying of severe malnutrition. So he put me on enzymes. That helped a little, but I still struggled to keep weight on.

Then I took things into my own hands. I took myself off all my medication except what I absolutely needed to live (it went from 19 to 2). I was afraid to tell my primary care doctor, but she said, “Good for you! “

Then hubby and I watched the documentary Forks Over Knives, and we went vegan the very next day.

I can’t find the words to say what a difference it’s made. I am finally at a decent weight that I am able to maintain, and I feel so much better!

I now do these things for myself. I eat whole food,  plant based, I exercise, even if it’s my physical therapy exercises, I drink 64 ounces of water (at least) a day (Zephyrhills is my favorite) and I try to look at the positive in life… Smell the roses (or at least take pictures of pretty flowers!)

I’m now happy and well on my way to becoming healthy. I love my life!

Today I wanted to share with you my homemade ratatouille to which I added farro.

I just took potatoes, onions, celery, mushrooms, zucchini, and butternut squash, cooked them in a combination of veggie broth and Engine 2 marinara sauce, and seasoned it with Italian herbs. I added the grain for the last 15 minutes of cooking time.

No added sugar, oil, or salt. And it was scrumptious! I thought about adding nutritional yeast, and I still might to the leftovers, but it was perfectly delicious as it was. And very filling!

I encourage you to experiment in your kitchen with the fresh veggies and grains available to you. You might be surprised at how good the simple foods can be.

What are you cooking tonight?

Matthew 28

1 In the end of the sabbath, as it began to dawn toward the first day of the week,  came Mary Magdalene and the other Mary to see the sepulchre.

2 And, behold, there was a great earthquake: for the angel of the Lord descend from heaven, and came and rolled back the stone from the door, and sat upon it.

3 His countenance was like lightning, and his raiment white as snow:

4 And for fear of him the keepers did shake, and become as dead men.

5 And the angel answered and said unto the women, Fear not ye: for I know that ye seek Jesus, which was crucified.

6 He is not here: for he is risen, as he said. Come, see the place where the Lord lay.

7 And go quickly, and tell his disciples that he is risen from the dead; and, behold, he goeth before you into Galilee; there shall ye see him: Lo, I have told you.

8 And they departed quickly from the sepulchre with fear and great joy; and did run to bring his disciples word.

Just a quick blog here to say Thank You for all the likes!

Yesterday I gathered my first harvest! I had butter lettuce and romaine,  basil and rosemary,  that I used in my pasta and salad. It was delicious!

Gardening is also good exercise. Being that I apparently broke a bone in my foot,  it’s hard to get my 10000 daily steps in. This was a great alternative! But I did get almost 3000 steps in today.

I’m loving my vegan lifestyle. I’m so much more healthy than I have been in years! Even if you don’t choose to cut out animal products,  I encourage you to eat more veggies,  and grow your own for optimal nutrition.

I almost forgot to post this!  But I’ve added to my little garden.  I have rosemary and peppermint in the two pots at the top, and the pot on the left has cilantro,  lemon sage,  marjoram and oregano or thyme,  I forgot which one. 🤔

I’m loving this so far! I’m going to be harvesting the larger leaves on my lettuces this weekend. I want to use them in my chickpea salad sandwiches. Yum!
