Today I wanted to share with you my homemade ratatouille to which I added farro.
I just took potatoes, onions, celery, mushrooms, zucchini, and butternut squash, cooked them in a combination of veggie broth and Engine 2 marinara sauce, and seasoned it with Italian herbs. I added the grain for the last 15 minutes of cooking time.
No added sugar, oil, or salt. And it was scrumptious! I thought about adding nutritional yeast, and I still might to the leftovers, but it was perfectly delicious as it was. And very filling!
I encourage you to experiment in your kitchen with the fresh veggies and grains available to you. You might be surprised at how good the simple foods can be.
