Dinner was a veggie bowl from Chipotle. It’s not a very pleasing picture, because I already mixed it up, but it was delicious! 

As I mentioned last week, I have kidney stones, and in order to keep from developing more, I need to eat a low oxalate diet, which means I can’t have most beans, greens, or nuts. Pretty sad for a vegan. 

But I can have a lot of other things, like corn, red potatoes, lentils, lettuce, flax seed, broccoli, cauliflower, and cabbage. 

So, my veggie bowl consists of brown rice, romaine lettuce, corn salsa, pico de gayo, and guacamole, and I added some flax seed when we got home. I also had a side of soft corn tortillas. So good, and so filling! I couldn’t eat more than half, but that just gives me more for later! 

Just because I can’t eat some food, doesn’t mean I can’t eat healthy. I will be sharing with you some of my recipes for a healthy vegan low oxalate diet. 

Food is good!

Update on my garden. 

It’s looking a little sad,  but it’s still producing a lot of good food. 

The plan for tomorrow is to make a vegan caprese salad, with lettuce, tomatoes, and basil from the garden, and vegan mozzarella and balsamic vinegar. I’ll take a picture and post it next week. 

It would be better, but even vegans get sick. I  spent the week before my birthday in the hospital with kidney stones. One was 8mm and completely blocked my left kidney. I now have a tube in my back, will have lithotripsy to blast the stones so they can pass, and about a week after that, they’ll remove the tube. 

Meanwhile, I can’t do very much, so my garden is slightly neglected. Hubby does the best he can, but taking care of me and our home, and working full-time, there’s only so many hours in a day. 

And now I have to tweak my diet yet again. Low oxalate foods, so I won’t keep developing stones. I’ll update you on that when I post my salad picture. 

For now, the order of the day is rest.

My first harvest of cherry tomatoes! I’m going to make a salad with my lettuce, and add mixed herbs, rice, beans, and maybe I’ll grill some marinated tofu. Yum! I’ll post a picture when I get it done.

Update on my little garden…I have tomatoes! They’re not quite ripe yet,  but many of them will be before next Wednesday. Looking forward to that harvest! And my basil is flowering… 


Here’s my trees,  and my romaine lettuce. The wind knocked them over last week,  but they don’t seem too worse for the wear. The romaine is bolting. I think it’s too hot. 


The butter lettuce is thriving, though. My first harvest, I pulled them up. The second time, I just cut it off and wanted to see what happened. And it’s growing back! A double harvest! Yay! 

And my herbs are massive! Looking for recipes in which to use them. 

Does anyone have any suggestions for a summer crop in a tiny pot in Central Florida? Any ideas on how to use the herbs?
