Sometimes you have to just use what you have. We had leftover jambalaya and a green salad. No added oil.
I tried to keep it low oxalate, using black-eyed peas instead of beans to stretch the jambalaya. Still plenty of protein, but with all the fiber and no cholesterol.
All in all, it was healthy, simple, filling, frugal, and delicious!
