Twenty three years ago today, hubby and I were married! Because, as a rule, we don’t go out on Sunday, we celebrated yesterday at our favorite vegan restaurant, Ethos Vegan Kitchen. 

I started to eat before I remembered to take a picture! But we began with the Boxty, an Irish style potato cake, with vegan sour cream and chives. Delicious and very filling! 

My main course was the lasagna! My very favorite item on the menu. It was 10 times as good as it looks! And, of course, it came with garlic bread! Yum! 

We also did a lot of running around, and came home for an early evening. 

I can honestly say that these have been the best 23 years of my life! I couldn’t ask for a better companion! He is my world… My everything!

I’m trying to walk more, but it’s been difficult because, since I was out of commission for 8 weeks, I’ve developed severe pain, particularly in my left leg. I went to the doctor last Friday, and he’s sending me to an orthopedic doctor. He said I might have a small fracture in the tibia. However, my blood test results showed I’m low in vitamin D, so I’m thinking that might be the culprit. I’ve upped my dose, and the pain has subsided somewhat. I’m still getting my strength back, so I am taking it slowly, but I’ve been taking about 5000 steps per day. 

The above picture shows one of the beautiful views on my morning walk. And it shows one of my favorite breakfasts! Love my veggie sushi! Avocados are awesome! 

All in all, I’m feeling better. I hope I have the kidney issue under control. I have my diet and exercise, and it’s great to be back on top!

Wellness Wednesday, July 19, 2017 My First Veganiversary! 

Happy Veganiversary to me! Hubby and I watched  the documentary, Forks Over Knives, a year ago, and went vegan the very next day. And it’s been great! Yummy food, as much as I want, and my health has done nothing but improve, aside from the kidney stone fiasco. But with a few dietary tweaks, I’m better than ever! 

To celebrate, I had a waffle iron full of hash browns (no oil) for breakfast with Thai spicy ketchup and regular organic ketchup. Delish! 

Then I had this delectable dinner: salad of romaine lettuce, tomatoes, avocado, and kalamata olives, with oil free zesty Italian dressing, saffron rice with Gardein chickn strips, and a mixed vegetable medley of zucchini, summer squash, eggplant, and diced tomatoes. As usual, I couldn’t eat it all, but that’s OK….leftovers! 

I’m loving my life! So glad I went on this journey! I invite anyone to adopt this kind of lifestyle. I’ve never been happier!

What I ate for dinner and an update… 

Hubby made a spaghetti bolognese with elbow macaroni, marinara sauce from Trader Joe’s, and lentils, also from Trader Joe’s. He also made a chopped salad of romaine lettuce, tomatoes, black olives, and roasted red peppers. I had an oil free zesty Italian dressing on it. And it was all healthy and oil free… except for the garlic bread. But it was so good! 

I almost forgot to take the picture! I had my favorite watermelon juice, also a Trader Joe’s special. It’s so delicious! And low oxalate! 

I got the tube out of my back 2 weeks ago now. I’m doing so much better! I have to rebuild my strength, though. I was pretty much out of commission for 8 weeks! And I can have some cheat days, according to my doctor. Just not very often. No more kidney stones! 

So I’ll share with you next week the feast I fixed for the 4th of July.
