Healthy Eating! 

I’m trying out a recipe for a potato cleanse. If you want to know more about that, see Potato Wisdom on YouTube. 

In this dish, I cooked Yukon gold potatoes in the electric pressure cooker, steamed some broccoli and cauliflower, and chopped some crimini mushrooms. Then I topped it with some homemade vegan cheese sauce. I’ll have to post the recipe in another blog, as I haven’t perfected it yet. Still, all in all, it was good. And almost no fat. Very filling! 

I don’t really track macros, but one of these days, I’ll have to do it in order to share with you how healthy and nutritious this simple kind of meal can be.

I don’t remember if I’ve shared these photos before, but I just wanted to tell you that you can eat a vegan diet and still eat out on occasion. 

This is from our favorite restaurant, Ethos Vegan Kitchen, in Winter Park, Florida (which, by the way, has been nominated as best casual dining restaurant in Veg News magazine!)

I love their lasagna, complete with garlic bread! Delicious! I think it’s my favorite dish on their menu. 

This was our appetizer. It’s called the Boxty. It’s a potato cake complete with sour cream and chives! All vegan, of course. I love this stuff! 

Ethos is having a customer appreciation month and tomorrow, everything is 20% off. Guess where we’ll be eating!

Yes, you can be vegan and still enjoy your food! If you’re in the area, I suggest you try them out!

Responding To Charlottesville

Latter-day Soprano

The Church of Jesus Christ of Latter-day Saints released the following statement on Sunday, August 13, 2017:

“It is with great sadness and deep concern that we view the violence, conflict and tragedy of recent days in Charlottesville, Virginia. People of any faith, or of no faith at all, should be troubled by the increase of intolerance in both words and actions that we see everywhere.

“More than a decade ago, the late Church President Gordon B. Hinckley (1910-2008) addressed the topic of racism when speaking to members of The Church of Jesus Christ of Latter-day Saints. He powerfully and clearly taught this principle:

“No man who makes disparaging remarks concerning those of another race can consider himself a true disciple of Christ. Nor can he consider himself to be in harmony with the teachings of the Church of Christ.”

Me at my worst. I did get down to an even lower weight, but I don’t have any pictures. I think I was around 110 here. I was almost dead. Literally. But through research, trial and error, I found a vegan diet. 

This picture was taken about 2 weeks ago. I’m not entirely healthy yet, but I’m on my way! So much better! 

I am now studying to become a certified aromatherapist! Between my new lifestyle and my knowledge and use of essential oils, I can’t believe the difference! I think it shows in my pictures.

Salad fixings for tonight’s dinner! Healthy, delicious, and oil free! 

Here’s what it looked like when done. Nothing great, but it sure tasted good! The only oil in the entire meal was in the whole wheat naan bread we got from Trader Joe’s, which we ate with the meal. And I couldn’t finish it. That’s OK. I love leftovers, and if I get hungry later, I have something good for me to eat.

Did I mention that I love leftovers?! I love being healthy!
