I can’t get the bold to stay on, so I hope this isn’t too hard to read. 

Today’s Wellness Wednesday is just a simple burrito bowl…with a twist. 

Last week, I prepped some food and froze it, so it wouldn’t go bad before I had a chance to use it. I also wanted to have some things on hand, in order to make dinner easier to make quickly. 

So, I cooked a combination of mushrooms, bell peppers, and onions in my pressure cooker, cooled them off and froze them in gallon bags. It made about 4 pounds in total, that I divided by 3. I also cooked 4 cups of rice (made 8 cups), used 3 cups cooked in a meal, dividing the rest into 3 freezer bags. 

Dinner tonight was a bag of rice, a bag of peppers, a can of chick peas, some fresh salsa, lettuce, and tomatoes, and an avocado. I heated everything and the meal was complete. So simple, and done in just minutes! I always have mine with a little sweet chili sauce, and usually a little corn and lime juice, but I forgot. Delicious! And very healthy!

As most of you know, we just went through hurricane Irma, and although we now have power (after six days without it), our little community still has a boil water order. I keep a stainless steel bowl full of bottled water (we prepared with plenty, long before the storm) in the bathroom sink for washing hands, but sometimes I want a little more disinfectant just to be sure we remain healthy. However, I couldn’t find what I was looking for in the store. 

do TERRA to the rescue! A few drops of On Guard in a little fractionated coconut oil makes a great hand sanitizer! And a side benefit is how good it moisturizes my hands. I absolutely LOVE this stuff! It smells really nice, too! An excellent way to stay on top of things, especially in an emergency situation.

Recovering from Hurricane Irma. As many of you know, we live in an rv, and we were evacuated from the park prior to the storm. 

I knew we’d be safe, as some friends allowed us to stay with them. They have a pretty sturdy home, so the only thing I feared was that our little home would be damaged. 

But I believe in the power of prayer and I know that all of America was praying for us! As it turned out, we lost power and water where we were staying, plus three huge trees came down. Fortunately, they didn’t fall on the house! 

#MormonHelpingHands came to the rescue and helped the Zerns clean up their property! They helped whittle down what could have taken a month for just the two of them, to an afternoon’s worth of work! 

If I wasn’t handicapped, I’d have been out working, too. And hubby was at work. 

As for my little home… NO damage! None! We still don’t have power, and now we’re at a hotel, because no power and no water where we were staying. 

We’re going back home tomorrow to gas up our generator and wait it out for the power to be restored. It might be Sunday, which means I won’t have internet access till probably Monday or later. That’s why I missed my Scripture Sunday post. (the day the hurricane hit) 

But I’ll be back as soon as I can! Heartfelt thanks to Linda L. Zern and her hubby, Sherwood for allowing us to stay there during the storm. And thanks, America, for all your prayers. And most of all, thanks to Heavenly Father for hearing and answering those prayers!

We’re going to be OK!

I live in an RV. I also live in Central Florida. As you know, we currently have an epic hurricane bearing down on us. 

So, we have to evacuate. I have a good place to stay, with a friend who lives close by, but I am still anxious about the storm. I know I’ll be OK, but will my home survive? I already have trouble sleeping, and my do TERRA lavender essential oil helps with that. 

But I learned that it might also help with my anxiety. I have found that, when I diffuse it, or even apply a drop or two topically, it helps to calm me, giving me a sensation of peace and tranquility. 

It really works! It helps that I am as prepared as I possibly can be, and as it doesn’t erase the possible dangers that lie ahead, it does help me to cope.
