Sometimes you just have to do it.

Get out and walk. I’ve been out of commission for so long I feel like a butterfly coming out of the cocoon!

And, of course, after all that, you have to eat something healthy. Just a lot of salad fixings and an oil free dressing. Yummy!

Simple Christmas dinner. A stuffing casserole with Gardein vegan chicken strips, celery, onion and mushrooms, and dried cranberries. With steamed green beans. Delish!

These were made by my mother-in-law. She passed away in 2012, so they, along with the photo of my boys and myself, are particularly precious.

The picture was done the Christmas before my younger son died.

I love to read, and I love re-reading some Christmas favorites during the season. Richard Paul Evans is a favorite author of mine, and this book is one I like to read year after year. 

Anne Perry’s A Christmas Guest is a new one for me, so I’m looking forward to some reading enjoyment!

What plant reminds you more of Christmas other than the tree? Poinsettias, of course! 

Ours is a sad, small plant. I got injured and hubby forgot to take it out of the plastic and water it, but we saved it.

We had two good sized plants last year that we placed outside our door. They were nice for awhile until the wind kicked up and blew off the leaves.

I love the Christmas colors of red and green. It just makes me smile.

No added oil dinner

Hubby made us some mashed potatoes with cauliflower, with soy milk, because he wanted to try it to see how good it was. He also cooked Brussels sprouts in the pressure cooker. And we had a vegan cheese sauce I made from a recipe in Jill McKeever’s OMG Good instant pot cookbook.

Delish! And oh so healthy!
