Homemade udon noodle soup. Made with veggies and enoki mushrooms and tofu. I used white miso paste to flavor it and give it some good probiotics. Delish!

Tonight we were invited to a dear friend’s home, where she made a delicious Italian bean, barley and spinach soup, and she made it vegan especially for us! We had it with fresh Italian bread and vegan butter.

Did I say that she’s Italian? We had a delightful time. And the food was so healthy (except for the butter, of course, but a little every now and then can’t be too bad, can it?)

Good food, good friends…the perfect recipe for health!

Tonight’s recipe comes from the new Forks Over Knives magazine I recently purchased from Whole Foods.

It’s the Easy Noodle Soup, and we served it with a mixed greens salad.

We just used a head of romaine and about 8 ounces of arugula. I dressed mine with a simple orange vinegar I bought at Trader Joe’s. 

For anyone interested in how healthy and delicious a vegan diet can be, I suggest you watch the documentary Forks Over Knives, or the more recent What The Health. 

And it’s not as hard or expensive as is touted on social media, as long as you stick to whole foods.
