Today I want to share with you two resources that help me with my plant-based lifestyle.

The first is this book. Studying it shows why a plant-based diet is the healthiest one for humans. This study took 20+ years and changed Dr. Campbell from an omnivore who grew up on a farm to one of the plant-based movement’s biggest supporters.

This book teaches the whys. Why do I crave certain foods? Why am I driven to eat things I know aren’t good for me?

It not only answers these questions, but teaches how to avoid these pleasure traps and begin a healthy way of life.

I cannot recommend these books highly enough! And if you are a more visual person, I suggest you watch the documentary, Forks Over Knives. Best decision hubby and I ever made concerning our health.

Thoughtful Tuesday, February 27, 2018 Special Edition

Today is a very special day for me. Forty four years ago today, at 12:43 PM Eastern Standard time, I became a mother for the first time.

This young man changed my life forever. Through him, I have experienced the greatest of joys and the deepest of sorrows.

It has been almost twenty three years since he died, but I know he’s with me in spirit, and I also know that, because Jesus Christ died and was resurrected, we will one day be resurrected through His power, and we will be together again.

Until that time comes, with all the love in my heart, I want to wish you the happiest of birthdays, my son!

I wanted to share with you this new app I found. It’s called HasFit, and I’m loving it!

It has workout routines for everyone from seniors who can’t even stand, to advanced HIIT.

This old body is slow at recovery this time around. I’m so out of shape that I started with the seated workouts for seniors. And they are good programs. Twenty minutes, and I break a sweat.

Now I just need to be consistent. My weight stayed the same this week, but I’m sure it’s partly because the flu came back to bite me, and I really haven’t been doing much. I have to keep reminding myself that this, too, shall pass.

Today’s lunch. Avocado and tomato sandwich with Trader Joe’s Everything But The Bagel seasoning on whole wheat toast. One of my go-tos and one of my absolute favorites! Delish!

And for dessert, a date nut roll. Yummy!

Yes, we can eat healthy and still have all the flavor!

My vegan diet changed my life…actually saved it. I began to absorb nutrients and now, I’ve even gained a little too much weight! (Blush, blush)

But since I began my quest for a more healthy whole foods diet, I got rid of one pound this week! My goal is to get back down to 135. I was 164 last week. I’ll keep you posted.

Meanwhile, I do still struggle a bit. I’d like to exercise more, but don’t want to reinjure myself, and sometimes I slip and eat some junk food. But all in all, I think it’s the best way to live. All I know is that it works for me, and despite everything, I’ve never been healthier.

I’m beginning to document my road back to health. I’m writing about my diet, lifestyle, and the essential oils that have been helping me along the way. I’m so tired of being sick. It’s not nearly as bad as it once was (as some of you know, I spent over 3 years bedridden) but I know it could be better and it starts with movement and cleaning up my diet.

So this lunch is a good example. It’s a fried rice, no oil, frozen stir fry veggies, and tofu. We bought the rice at the bulk store, the veggies at the dollar store, and the tofu at Wal-Mart. So it’s frugal as well.

We added 1/4 cup of teriyaki sauce, and it was delicious!

And I’m moving. I’m taking it easy as to not injure myself, but I’m being consistent.

Dinner tonight was leftovers. A simple potatoes and broccoli with a vegan cheese sauce, recipe from Jill McKeever’s OMG Good Instant Pot Cookbook.

I had some ground flaxseed and walnuts on top and spiced it with Trader Joe’s Everything but the Bagel seasoning.

Delish! I’m also taking micro-baby steps in recovering my health. I’m trying to get some movement in every day. Today I walked while I watched a YouTube video. And then I stopped. I am taking it slow as to not injure myself again. So far, so good.
