Because I broke my back, the ladies of my church have mobilized to bring in vegan dinners for hubby and me. I am forever grateful!
This is a vegan spaghetti, using spaghetti squash for the noodles, and the sauce was filled with carrots and peppers and onions and eggplant. It was incredibly delicious.
We added Violife vegan parmesan to it for the perfect touch.
