It doesn’t look pretty, but it’s delicious! Potatoes with collard greens and my no-cheese sauce. I added a bit of Trader Joe’s Everything but the Bagel seasoning. Yum! That’s what’s for brunch.
We’re having a Buddha bowl for dinner…hannah yam, quinoa, broccoli, and baked beans English style. They don’t make theirs really sweet like we do here in the US. And as you know, I don’t like sweet. But we’ll top it with a drizzle of homemade cashew cream.
If I’m hungry later, I’ll probably have more of my vegetable curry. It might sound like a lot of food, but it’s nutrient dense, and if you count the macros, it’s really not that many calories. My brunch is less than 300.
Update: we have health insurance again. I’m just waiting on the doctor to make arrangements to fix my back.
