It doesn’t look pretty, but it’s delicious! Potatoes with collard greens and my no-cheese sauce. I added a bit of Trader Joe’s Everything but the Bagel seasoning. Yum! That’s what’s for brunch.

We’re having a Buddha bowl for dinner…hannah yam, quinoa, broccoli, and baked beans English style. They don’t make theirs really sweet like we do here in the US. And as you know, I don’t like sweet. But we’ll top it with a drizzle of homemade cashew cream.

If I’m hungry later, I’ll probably have more of my vegetable curry. It might sound like a lot of food, but it’s nutrient dense, and if you count the macros, it’s really not that many calories. My brunch is less than 300.

Update: we have health insurance again. I’m just waiting on the doctor to make arrangements to fix my back.

It was April 4, 1970. My sister’s 19th birthday. My mom was getting ready to leave for work and we decided to take this picture. I think it’s the last one I ever had with my mother.

We learned in January that she had cancer, but to a 14 year old, that meant she would die in about 20 years. Little did I know that just 5 months after this photo was taken, she’d be gone.

I’ve had heartache since, but this was the first and worst in my short life. It changed me. It turned my life upside down.

But there is much grief where there is much love. I’m grateful for my faith that assures me we’ll be together again, that tells me she’s with my boys.

I’m grateful for my memories, for the lessons learned at her knee. For the music she brought into my life. For the life she gave me.

And I look forward to my joyful reunion with her when the Lord sees fit to call me home.

It is also my mother-in-law’s birthday today. Happy Birthday in Heaven, Mom!

Still struggling with my back. No answes yet. At least I have good vegan food to eat and a wonderful hubby who prepares it!

Breakfast today was a simple baked potato. I never have much of an appetite in the morning. This is plenty for me and easy on my stomach.

I missed my other posts this week, as I reinjured my back. I see the neurosurgeon today.

Sometimes even adopting a healthy lifestyle doesn’t negate all the damage done in one’s prior life. I’ll keep you posted as soon as I know more.

I’m walking again! Without my canes! I’m healing in record time. The doctor said it would be 6 weeks, but it’s only been 4, and I’ve been walking for 4 days now!

I credit my lifestyle. I eat whole foods plant based, and I walk. Working my way back to 10,000 steps. Yesterday I took 2500 steps. I’m being very careful, but I’m moving! Loving my life!

The salad is what I ate for lunch. Breakfast was a baked potato with a plant based cheese sauce made with potatoes, carrots and nutritional yeast. No salt, oil or sugar. And with it I had bok choy. I think it’s my favorite green. We’re having grilled eggplant, Portobello mushrooms and tofu sandwiches for dinner.
