Breakfast was just avocado toast. I’ve posted pictures of that before. But lunch was this!

It’s split-pea soup with onions, potatoes and carrots. Vegan, of course! Delish! And dinner is this!

Baked potato with broccoli and more of my fat-free vegan no-cheese sauce. My favorite!

Two days from today, James would have been 45 years old! (The blonde) Words cannot express how deeply I miss him. He was a good boy, never got into any trouble, even slept the night through from birth! The only time I ever walked the floor with him was when he was teething. He had an infectious laugh, a big heart. He was sensitive, friendly, and knowledgeable. And above all else, he loved God. And lived his religion.

Happy Birthday in Heaven, Son, until we meet again.

A simple Colcannon for dinner. We added onions and cooked it in a chicken-flavored vegan broth. I seasoned mine with a little Frank’s RedHot and some Everything but the Bagel seasoning. Delish!

As a sidenote, the vertebroplasty has finally been scheduled for Friday at 11 AM. Looking forward to being out of pain! I’ll be going to physical therapy as soon as that can be arranged.

This has been a good eating day. Breakfast was roasted potatoes with steamed bok choy and the no-oil, no-cheese sauce I’ve shared in previous posts. Lunch was toast with spicy hummus and avocado.

Dinner was this delicious bean and barley soup made with potatoes, carrots, celery, onions, and broccoli, and Italian seasoning. Yum! I would have had it with Frank’s RedHot, but I forgot. Good thing there’s leftovers!
