Just got back from visiting my sister in Bradenton, Florida, for her birthday.
This is a photo of the Manatee River I took on the way home. We have some beautiful scenery here in Florida. On the other side of the bridge was a houseboat floating lazily down the river.
Sometimes these little excursions are just what one needs for a refreshing dose of mental health.
And I’m still walking for my physical health…and living my plant based lifestyle.
This is today’s step count, even with the travel. We had a tofu scramble for breakfast, a bean burger for lunch and a veggie sandwich for dinner. Filling, healthy, and delicious!

My first date with hubby was April 20, 1994, his parents’ 40th wedding anniversary. We live in Central Florida. I had been to Utah and back, and he had been to Alaska and back.
As we got to know each other, we learned that, not only did we go to the same high school, but that we had lived less than 3 miles away from one another. We knew many of the same people, we just had never met each other.
We met 25 years later in the Circle K where I worked! We’ve been inseparable ever since. And going on 25 years of marriage (in July) and we’ve never had a fight. We do disagree, but choose not to fight about our disagreements. I don’t think we’ll live to see our 50th, but that’s ok. Love is eternal, and I’m beyond grateful for what I have.

I just learned this past week that my first husband died. This is the man I ran away from back in 1978.
It’s a long story which I won’t go into here, but my older son wanted to contact his father back in 1992, so I helped him. We learned that Hector was in prison, doing a term of 5 to 25 years. In the process, he told James that he was responsible for everything that went wrong in our marriage, that I was an angel. He didn’t want James to hold anything against me.
It seems strange to me that it took over 22 years to learn of his death. It’s even stranger that this makes me so sad. I guess we all have thoughts about what could have been.
RIP, Hector.

Still walking, still moving! I’m not done for the day yet. I don’t pay any attention to the sleep mode…it lies to me. It counts every time I sit down as sleep time. Lol!
I had my usual potatoes, bok choy, and no-cheese sauce for breakfast…no added salt, sugar or oil, and always vegan, of course!
Not pictured, I had a veggie sandwich for lunch, complete with lettuce, spinach, tomatoes, olives, and sauerkraut. Delish!
Don’t know yet what I’m fixing for dinner, but it will be nutrient dense, all-delicious, and all-vegan!

Five years ago, I was coming to this place…Shands Hospital and cancer research center at the University of Florida. I was at a point where I was losing 2.5 pounds a week…and I was already below 100 pounds. My doctor thought I had cancer. We didn’t know what was wrong.
I got lucky. My doctor at Shands happened to be the head of the gastroenterology department. I learned from his students that Dr. Draganov was one of the world’s premier doctors…he wrote the textbooks that students were learning from.
He told me I was dying of severe malnutrition. He put me on enzymes and it helped a little, but still couldn’t maintain my weight above 110. After lots of trial and error, it was determined that I was allergic to animal products.
I have continued to regain my health since those days, but I credit my doctor and his staff for saving my life. I don’t miss coming here, but am eternally grateful for having had this place to turn to.

Starting the day right. Black bean and quinoa bowl with butternut squash, carrots, onions, and kale.
Having a veggie sandwich for lunch; hummus, heirloom tomatoes, tofu and broccoli sprouts.
Dinner will probably be a simple pasta with marinara sauce.
And I’m still walking. Getting my day started early. Already have so much accomplished.
