I know this is late, but I’ve been running all day. This is one of my favorite meals….avocado toast. I’ve been loving rye bread lately. And I top it with Trader Joe’s Everything but the Bagel seasoning. Delish!

I’ve had a busy day, and just got back from choir practice. Gotta keep those pipes in tune!

Memorial Day 2019

I tried to get a good photo. A few years ago, when people were stealing copper wiring from air conditioning systems, someone thought it waa a good idea to steal the brass vases off headstones. We came to visit my mother’s grave and found the stone literally cracked in half. It looked as though someone had tried to yank the vase out of it with a truck. The tracks were still very visible, as it dug into the soft soil.

I don’t know how they fixed it, but this is what it looks like today. As you can see, my mother served as a U S Army nurse during WWII. In fact, that’s how my parents met, as she was his nurse upon his return from his harrowing experience as a POW of the Japanese.

Although Memorial Day is for soldiers who have died in battle, I still honor my mother, as she died in her battle against cancer.

I would say more about my father, as well, but I want to wait until I get a photo of his grave. He’s buried in Arlington National Cemetery. Maybe I’ll write about him on Veterans Day…

Growing up in Florida, I’ve never been afraid of them, but have always given them a wide berth.

There’s a reason for these signs. There are alligators in every waterway in the state. And a hefty fine if you get caught feeding them.

I took this last week while standing in my backyard. Looks harmless enough, but I wouldn’t want to be swimming in this pond!

Breakfast was my usual potatoes, bok choy and vegan cheese sauce, with no salt, no oil, no sugar. Extremely healthy.

This is my burrito filling for dinner. Zucchini, yellow squash, mushrooms, onions, bell peppers, brown and wild rice and black beans. Rolled it up in a tortilla and topped with enchilada sauce and served it along side lettuce. Delicious! Hubby even had two!

And my steps as of 4 pm. I’m still moving!

Yesterday was Mother’s Day. It was also my birthday. But I got a huge surprise on Friday.

My daughter-in-law (hubby’s oldest son) sent this to me. Since my boys died, I never thought I would be a grandmother. But since I’ve known them, Terry and Sarah have always included me in the family. It has really brought joy to my life.

These gifts were hand-picked for me, and the topper is that the music box plays “Wind Beneath My Wings.” I cried in the best way when I got them.

I do love my kids and grandkids, even if I didn’t birth them. This was the best day in 28 years! I’m so grateful! Best memories ever!

Breakfast was a potato with bok choy and my no-cheese sauce from the Well Your World website. Lunch was this simple hummus, avocado and broccoli sprouts sandwich on organic wheat bread.

Dinner was this delicious veggie bowl with brown rice, beans, and enchilada sauce, full of zucchini, yellow squash, peppers, onions and mushrooms.

Of course, everything is vegan. My health depends on it.

And I took a walk with Leslie Sansone!
