Memories Monday, June 24, 2019

Today is the 24th anniversary of my son’s death. He would have been 45 years old had he lived. I’m beginning to think that I might have been chosen to pass through this trial in order to help others understand that there is hope. Horrible things happen, and we not only survive, but we can be happy again, despite the tragedy.

I will always treasure my 21 years with you, James. From your first cry to your last “I love you.” You loved life, and you loved God. And you lived your faith. I couldn’t be more proud of what you became.

Rest in peace, my son. Until we meet again…

I don’t like sweet, but I bought this on someone’s recommendation. I usually have my potatoes and bok choy for breakfast, but hubby was sick and sleeping on the couch. As we live in an rv, I didn’t want to wake him up by making breakfast, so I decided to try this. It tastes like the Girl Scouts thin mint cookie. I wouldn’t want this very often, but it was vegan and easy. And not too bad.

Lunch was leftover angel hair pasta with marinara and garden veggies.

Dinner is a veggie sandwich on a wheat roll, complete with tomatoes, lettuce, banana peppers, red onion, and black olives. It also has mustard and guacamole. Delicious!

I was going to post my steps, but forgot to get the screenshot. I’ve been averaging about 5000 steps per day. Not bad for not even being able to walk 3 months ago.

We were out of bok choy, so this morning’s breakfast was potatoes and broccoli.

Lunch was a simple chickpea salad sandwich on rye bread with broccoli sprouts.

Dinner was vegan macaroni and cheese and Brussels sprouts.

Eating vegan can be as simple as that. Recipes can be found online or you could ask me. I keep things pretty simple, though. Mostly roasted and/or steamed veggies and vegan sauces. Delish! And so easy.

Junior was killed 28 years ago yesterday. He was 14 years old. 28 years ago last Wednesday was the last time in this life I heard his voice.

But I can say that I know I will be with him again. Because of Jesus Christ, we will have a joyful reunion. This is all temporary. Because of this, I can be happy. I have a good life, a wonderful husband, and hope fills my heart.

I have treasured memories of my boys. But it doesn’t end here. We will share eternity some day. And knowing that brings me joy.
