We were out of bok choy, so this morning’s breakfast was potatoes and broccoli.
Lunch was a simple chickpea salad sandwich on rye bread with broccoli sprouts.
Dinner was vegan macaroni and cheese and Brussels sprouts.
Eating vegan can be as simple as that. Recipes can be found online or you could ask me. I keep things pretty simple, though. Mostly roasted and/or steamed veggies and vegan sauces. Delish! And so easy.
