I made a tofu/chickpea stir fry for dinner tonight. I added zucchini, summer squash, crimini mushrooms, baby bok choy, tomatoes, and yellow and orange bell peppers. The sauce is just Trader Joe’s Soyaki and water. This is served with brown and wild rice. You could say it’s a clean out the refrigerator kind of meal. Lol! But whatever it is, it’s delicious!
