My Misfits box came today! It usually comes on Thursdays, but being that tomorrow is Thanksgiving, I got it a day early! And it was even better than the last one!

Now I have to decide what I’ll do with it all. I know I’ll be making a Mediterranean salad for dinner. I have artichoke hearts, calamata olives, Violife vegan feta cheese, chickpeas, roasted red peppers, fresh tomatoes (it’s Florida!) and mixed baby greens. I think it will be delicious!

Looking forward to doing something similar this spring. I loved my fresh veggies from the garden. We had bell peppers, jalapeno peppers, cherry tomatoes (the best!), standard tomatoes, romaine and leaf lettuces, and five different herbs.

Getting in the Christmas spirit! You know we live in an rv. Well, we just found this delightful salt and pepper shaker set. I love it! So cute, and the cheer lightens my heart. We have to take care of our mental health as well as our physical health this season. So I’m all for filling our homes with things that bring us joy.

Hubby in his brand new suit! It’s the first suit he’s ever owned in 62+ years of living! I think he looks pretty good. But I’m biased. This is the man who has taken tender care of me for the last 25+ years, who saw me through the deaths of my boys, who dressed and bathed me the over three years I was bedridden. Who saw me through 4 broken backs and 4 strokes. And he did so willingly and with a smile on his face. The only thing he wanted from me is for me to be happy. I’m a fortunate woman married to a very happy man.

Today was the first cooler day here in Florida, so I decided to make some red lentil chili in my instant pot.

Then I had the idea to make a chili mac, so I boiled some noodles from Trader Joe’s and added a no-cheese sauce.

And I steamed some broccoli, because we need our greens. And this was the end result.

A delicious lunch with leftovers! I didn’t mix all the chili with the mac and cheese, so there’s two meals besides the original! I love to cook, but I also love having healthy food on hand when I’m busy or just not feeling it. And chili always tastes better the next day!

And, as always, it’s vegan. Yum!

Linda L. Zern is my favorite author. But before that, she was my neighbor, and before that she was my friend.

This past summer, she won this award

for this book, Gryphon’s Glade. It’s a fantasy.

It’s a different genre from her bestselling Strandline series, which is a near-apocalyptic story line.

But the reason she’s my favorite author is because of this book, Mooncalf. The writing is so well-done, and the story is reminiscent of To Kill a Mockingbird. It was written to a middle-grade audience, but it made me cry! And she’s in the process of writing a sequel!

All of her stories are based in Central Florida, where she has lived most, if not all, her life. I cannot recommend her enough!

I have been asked how, after the deaths of my boys, I am able to cope. One of the ways I manage is to journal. I make notes of my thoughts and struggles, my hopes and dreams.

I also keep a gratitude journal. I make a list of five things each day for which I am grateful. It can be as simple as the smell of the breakfast my husband is cooking for me to the profound recognition of my Heavenly Father’s care and protection from harm when my husband walked away from a head-on collision.

Writing and gratitude go a long way for this person’s mental wellness.

I’m grateful to you, my readers, my audience, for taking this wellness journey along side me.
