Today was the first cooler day here in Florida, so I decided to make some red lentil chili in my instant pot.

Then I had the idea to make a chili mac, so I boiled some noodles from Trader Joe’s and added a no-cheese sauce.

And I steamed some broccoli, because we need our greens. And this was the end result.

A delicious lunch with leftovers! I didn’t mix all the chili with the mac and cheese, so there’s two meals besides the original! I love to cook, but I also love having healthy food on hand when I’m busy or just not feeling it. And chili always tastes better the next day!

And, as always, it’s vegan. Yum!
