We’re staying home. But that doesn’t mean we can’t eat good food. And comfort food doesn’t have to be unhealthy.
I didn’t eat breakfast this morning, but hubby made this mac & no-cheese for lunch. It’s hard to tell, but there are brussels sprouts under all that delicious creaminess!
I made some colcannon last week but with a twist. I couldn’t find cabbage, so I used kale (which I learned is just as authentic in this Irish dish) instead. But what to do with the leftovers? I added a cup of flour, a cup of soymilk, some onion, nutritional yeast, and 2 flax eggs. Then cooked it up and served it with sauerkraut. Scrumptious! As usual, I could only eat one, so I’ll eat the other one later when I start getting snacky. If hubby doesn’t eat what’s left, it will make an easy breakfast. No-waste, healthy, simple, and best of all, tasty!
