Dinner is this lentil veggie soup I made. Using up the carrots, celery and onions in the refrigerator, I also added kale and what was left of the cherry tomatoes on my counter. I had half a bag of lentils, and threw the whole thing together in my instant pot along with canned diced tomatoes and tomato sauce. Topped it off with a quart of veggie stock and pressure cooked it for 15 minutes. It’s quite good, and I didn’t have to go out and buy anything to make it.

  1. Cooking and reading. And trying to stay active with exercise. Getting outside for a walk feels so good. And then it’s back to cooking and reading. I hope you are staying well, Betty.

    1. Yes. I’m housebound because I’m old. Lol! But hubby and I are walking with Leslie Sansone. And I’m doing a lot of reading and some writing. Getting ready to pull out my guitar and continue learning how to play it.

      1. Ha! I’m old too, be we are allowed out to exercise–so walks around the neighborhood are all we can do. Have fun with the guitar–so good to continue learning. I played for a couple years in high school, but dropped it pretty quickly. I am not what you would call ‘musically inclined.’ You most definitely are!
