Dinner is this lentil veggie soup I made. Using up the carrots, celery and onions in the refrigerator, I also added kale and what was left of the cherry tomatoes on my counter. I had half a bag of lentils, and threw the whole thing together in my instant pot along with canned diced tomatoes and tomato sauce. Topped it off with a quart of veggie stock and pressure cooked it for 15 minutes. It’s quite good, and I didn’t have to go out and buy anything to make it.
