I woke up late today. I usually don’t eat right when I get up, so lunch was my first meal. I made a stirfried rice with peppers, mushrooms, green onions, baked tofu, and corn. I used garlic, ginger, turmeric, onion powder, and kelp flakes for seasoning and had a little Trader Joe’s soyaki on it. Quite good!
Dinner was grilled polenta with a sauce of zucchini, eggplant, tomatoes, mushrooms and onions cooked in passada. This was really delicious! Best part is there are leftovers of the sauce I’ll be using with pasta tomorrow. Love leftovers!
I’ll probably have a potato with a little dressing before I go to bed.

I have been feeling a bit under the weather for the past couple of weeks….not the virus, my doc thinks it’s fibromyalgia.
So how do I take care of myself when I don’t feel like taking care of myself? First, I walk. Even if it’s just around the block. I make a point to move every day. I don’t know how long I have been walking regularly, but I’m pretty sure I have walked at least 5 days a week since February. Most of the time I make it 6 days. I think I’ve only missed 2 days in that entire time. Having had 4 strokes, I try to not take for granted the fact that I can walk at all.
The second thing I do is leftovers!
I made a version of red lentil chili a few days ago. I added a few extra veggies as well as sweet potatoes. Having it over leftover rice tonight. Easy peasy and always vegan.
And one other thing…
Not taking my vote for granted either. We went in person and filled out a paper ballot. Want to ensure as much as possible that my vote isn’t subject to fraud. Did you/are you voting?
Breakfast was simply grits and greens, in this case, spinach, flavored with a little salsa. Quite good!
Dinner is my Mediterranean salad. Lettuce, farro, chickpeas, olives, red onions, roasted red peppers, tomatoes, artichoke hearts and banana peppers. I don’t think I forgot to list anything! I have a fat free Italian dressing on it. Delicious! One of my favorites!
This week I will be adding a video to my YouTube channel for the first time in over six years. I currently only have one video posted. And it was originally to set up a book series I was planning to write pre-strokes, just as this blog was originally intended to do.
The book idea has morphed, and I will touch on that in the video. Now the only thing standing in my way is the fact that I don’t remember how to upload.
If any of you are interested, my channel name is my own. Betty Horn. Original, I know. But it’s the best I can do for the moment. It is nothing spectacular. I’m just using my phone.
But I’m committing to this week as long as I can figure out how to post it. Hopefully my small contribution will be of help to someone.
