Doing some meal prep today.

Refrigerator pickles and onions, lentils, grilled peppers and mushrooms. I also grilled eggplant and zucchini, but it wouldn’t fit in the frame. 😁 I put the leftover veggies together to make a stirfry later.

I don’t make individual meals, but components that can be put together in a myriad of ways. These can be used in sandwiches with hummus and sprouts, or in bowls, or salads. Any way your imagination and taste buds take you.

With what else I have on hand, frozen veggies, potatoes, quinoa, rice, this will last a week with minimal cooking. I mean, how hard is it to throw a potato in the oven?
