I made the most incredible winter vegetable soup a couple of days ago. I added potatoes, carrots, celery and onion as well as turnips, parsnips and broccoli for something green. It took 12 cups of water! I seasoned it with no-chicken boullion cubes and herbes de provence. It was sooo good!

But then there were leftovers. I added great northern beans and had it for lunch the next day. But there were still leftovers. I put 2 quarts in the freezer and was still left with over a quart.

So I decided to add some millet and brown rice ramen noodles, tofu, and green beans to make it a hearty meal. I added tamari and another boullion cube for flavor. It was so good I went back for seconds! Together, hubby and I polished it off.

What a wonderful way to spend a cold and snowy winter day over a bowl (or two) of hot, comforting soup. And all vegan with no added fat! I love eating whole food plant based!
