What I eat on a typical day

I started out with leftover colcannon. Love this simple meal of cabbage and potatoes.

Lunch was a 6″ Subway Veggie Delight no cheese. I load it up with all the vegetables. Spinach, lettuce, tomato, red onion, black olives, banana peppers. All on wheat bread.

Dinner was mac and cheese with summer squash, zucchini, and onions. Of course all vegan and oil free.

I love simple meals that are filling and delicious.

I went back to a favorite staple. Burrito bowls. Black beans cooked in my pressure cooker, rice, bell peppers, onions, mushrooms, tomatoes, olives and avocados on a bed of lettuce. It’s been awhile since I had this and I had forgotten how much I like it! Even better than Chipotle. Top it off with a squeeze of lime. Delish! Who said WFPB can’t be tasty?

Tonight’s dinner. Hubby served it upside down! Lol! Vegan shepherd’s pie with tvp, french style green beans, tomato soup and topped with mashed potatoes. Delish, simple, and vegan.

I know it’s been awhile , but I have been dealing with some health issues. Trying to get back into the walking, blogging, etc. I also have a YouTube channel for anyone interested. But I need to post there, too. Its just my name…Betty Horn. It’s more personal than this. I hesitate to say what’s wrong because I have no definite answers and so far I can’t get in to see the specialist until July 20. But my doc is trying to get me in sooner. Time will tell.

Until then, I am just keeping on. Too late in the game to give up now!
