What I eat on a typical day
I started out with leftover colcannon. Love this simple meal of cabbage and potatoes.
Lunch was a 6″ Subway Veggie Delight no cheese. I load it up with all the vegetables. Spinach, lettuce, tomato, red onion, black olives, banana peppers. All on wheat bread.
Dinner was mac and cheese with summer squash, zucchini, and onions. Of course all vegan and oil free.
I love simple meals that are filling and delicious.
