Dinner is farro and stir fried veggies to which I added some white beans. Simple seasoning of garlic, onion powder and a little turmeric and pepper. I cooked the farro in veggie broth for more flavor. It turned out quite good. But then again, I like simple meals.

Spent the morning at yet another doctor appointment. They’re ordering an iron infusion….again. Perhaps one of the reasons I’m so fatigued. And I am having 2 specialized blood tests to check for pancreatic cancer. This has been a long, hard road. Perhaps we’re seeing the light at the end of the tunnel.

I know I’ve shown this to you at least 100 times, but my favorite breakfast. Steamed potatoes, bok choy, and my no-cheese sauce. So good!

Dinner was Cuban beans and rice, with green beans, salsa and guacamole. I used the individual pack (100 calories) of Wholly Guacamole. Simple and delicious!

No picture, but I’ve been eating my veggie-lentil soup about an hour before I go to bed to keep my blood sugar from crashing in the middle of the night. It’s scrumptious and light.

Spent half the day at yet another doctor, but I think we are making progress. Then we went to Sprouts so I could get some steps in. It’s still snowing here!

But it’s supposed to be 75 on Saturday. Colorado bipolar weather.

Breakfast was my usual…bok choy with steamed potatoes and a no oil vegan cheese sauce. I’ve shown you that so many times.

But lunch was this:

Leftover tofu stir fry. It doesn’t look like much but it was delicious! Peppers, onions, zucchini, summer squash, mushrooms, and tofu, but this time I added pineapple, as I was already using garlic and ginger. And I added leftover rice. It was so good! I was glad to see I made enough for leftovers, then hubby said maybe not…depended on how much he ate! Glad he left some for me!

Dinner was this scrumptious lentil vegetable soup. Carrots, celery, onions, potatoes, garlic, and lots of lentils in a veggie broth seasoned with herbes de Provence. I think I could live on this soup! I threw in some grape tomatoes that were on their last leg. That’s the great thing about this. It’s a clean out your refrigerator kind of soup. And I have been craving it. I make it every week.

And my activity calendar. A sticker for every day I walk. I only missed the first! I take Sundays off. I’m determined to get well if it kills me! Lol!

Still walking. I’m getting between 5000 and 7500 steps a day…which is amazing considering I was bedridden for almost 4 years not so long ago.

I was hoping to update you on my health issues today, but after spending more than 2 hours with the doctor this afternoon, we still don’t know. But I am hopeful again. We have a course set up. I just have to be patient and wait for them to find it. Sometimes we have to jump through all the hoops before we get answers. And I have a few more to go.

But I’m still kicking!

I have to tell you about this book. Most books like this, as good as they are, don’t have the macros listed because the premise is that you don’t have to count calories in a WFPB lifestyle. That is true, but as a type 1.5 diabetic, it’s nice to have the carbs listed without having to weigh out each ingredient. And that’s information I need in order to calculate the amount of insulin I need.

She also gives basic information to the person new to this way of eating. And her recipes are delicious! Her book can be found on Amazon. She has no idea I’m writing this. I don’t think she even knows I have a blog. But she has a YouTube channel named Veginspired and also a Facebook page for anyone interested.

The biggest reason I love her book is because it may be the answer to my health problems. I’ll talk more about that next week, after I see my surgeon.

I highly recommend you checking out her social media. You won’t go wrong.
