What I ate today.

Today was a leftovers day. I had spaghetti (made with elbow macaroni) and a side of broccoli microgreens for breakfast. I love lazy mornings.
For lunch it was leftover pasta casserole. I got the idea from Brittany Jaroudi. Y’all should really check out her social media. She’s a great WFPB cook who follows Dr. Michael Greger. Anyway, this was my take.

It’s a mess, but that seems to happen when you put food away. It was really good though. You have to get the recipe from Brittany if you’re interested.
I might post about my health journey tomorrow…if I remember.
