I almost forgot! I’ve been busy and also sick…not covid. I actually had an allergic reaction to a protein shake that I thought was vegan but wasn’t. It’s like I have actually been poisoned when this happens. It takes about 3 to 4 days for my system to clear out. So it happens, folks. The allergy is real.

But I wanted to post my meals…or at least 2 of them.

My lunch was a classic go-to. A veggie sub from Subway. Simple, and I didn’t have to cook.

Dinner was a burrito bowl. I almost forgot to take picture! This is my last couple of bites. It consisted of shredded cabbage, Cuban style black beans, rice, and corn with a touch of Frank’s Red Hot on it. It looked prettier before I mixed it all up. It sure was good. And I really needed some healthy food after all my body has been through this week.

Just because a person is suffering with a migraine doesn’t mean that person has to go off plan.

Hubby bought me this delicious dinner from Whole Foods. Marinated zucchini, eggplant, bell peppers and yellow squash, ginger beets, and basmati rice with vegan chana masala. Yum!

On a totally unrelated subject, yet very fitting to wellness, I have a friend whose granddaughter was diagnosed with stage 4 hodgkins lymphoma about 9 months ago, and given little hope. As of today she is in total remission! That 10 year old girl is one strong cookie! Needless to say, we are celebrating her ringing that bell! Go Reagan!

It’s time to get back to my roots. I started this blog to try to bring a little sunshine into the lives of my readers, to give back a little of what has given me hope over the past 30 plus years since the death of my younger son.

My mental health has suffered a lot, especially since the death of my older son 4 years later compounding my depression and feelings of hopelessness.

Wellness Wednesday began as a means to show that eating plants can really improve one’s health, both physically and mentally. That was a great start.

I am going to try to post more often, about my faith, my food, and fun things I do to help me keep my balance, and perhaps continue to offer a pocketful of joy. I haven’t figured out a schedule yet, but stay tuned. More to come!
