I almost didn’t post today. As I have said earlier, I’m going through some stuff.

But my diet is still good. I had a piece of Spanish tortilla for brunch. It’s just hashbrowns baked together with onions and an egg substitute. I use Just Egg, but you can use a chickpea egg as well. Season as you like, mix together in a casserole dish and bake at 375° F for 50 minutes or until a knife inserted comes clean. It’s so good!

This is my evening snack. Avocado toast. I haven’t had this for quite awhile. I forgot how tasty it is. I added grape tomatoes and everything seasoning on Dave’s Killer bread. Simple and yum!

Today’s brunch. I have been missing my potatoes and bok choy (can’t find any at the moment) so I improvised. I took diced peppers and onions, and sliced mushrooms, and fried them up with potatoes. I seasoned it simply with a touch of salt and a whole lot of pepper (I LOVE pepper!) and voila! It hit the spot.

Served it with a cup of orange spice herbal tea. Delicious! As usual, I could only eat half, so I have a ready made breakfast for tomorrow!

I really have to catch y’all up on what’s been going on in my life, but that’s for another post.
