Just a short check-in. Got a positive covid test last Thursday. Hubby brought it home from work. I’m pretty sick. He already went back to work.
But there is hope. I have been more sick in the past. The problem with this, for me, is that it lingers. I have a few weird symptoms, but they just make me uncomfortable. And all I want to do is sleep.
I guess, like everything else, it just needs to run its course. Hope you are well this Wednesday. Let me know.
Sorry I’ve missed the past 2 weeks. I had a horrible case of bronchitis that wouldn’t let go and refused to leave. I’m better now but hubby is displaying symptoms, so we went this morning for yet another covid test. We won’t get the results for a day or two.
Meanwhile, I tweaked my diet just a touch. I have lowered my starchy veggie intake and raised my protein and fats. So far, the effects on my blood sugar have been great! I can’t say that I went vegan keto, because I don’t think I like 70% fat. It’s probably more like the old 30/30/40. I haven’t calculated it and don’t really plan to. I will still eat my starches, just not as much, as you will see here.
I just had an Orgain protein drink (not shown) for breakfast. Hubby and I went to Sarasota Vegan Deli to pick up and take home this sandwich they call the McBluffin. Just Egg, Beyond Sausage, and Follow Your Heart Provolone cheese. Delicious, but I could only eat about 3/4 of it. Good thing hubby was hungry.
This was a tasty snack. I also had a few calamata olives and a few bites of vegan cheese later for another snack.
Dinner was this tempeh bacon, lettuce, cabbage, avocado and tomato salad. Hubby just had blts. I wanted to avoid the bread on this one. It’s really, really good!
The only time my blood sugar went above 300 (not good) was after the sandwich. This discovery is going to help, I’m sure. I will keep you posted.
