Sorry about missing last week. We moved. Same place, different apartment. And I forgot all about this til close to midnight and I was exhausted!

I forgot to take a picture of dinner, but this was brunch.

It was leftover roasted veggies and potatoes. There’s red peppers, grape tomatoes, onions, garlic, mushrooms, and shaved Brussels sprouts. Perhaps the tastiest meal I’ve had in awhile.

I think I will roast potatoes, mushrooms and zucchini tomorrow. With or without more tomatoes. Haven’t decided yet. I love simple, delicious meals!
