Another what I ate today.

For brunch I had a breakfast casserole of potatoes, kale, mushrooms and tempeh bacon. This is soooo good!

As a late lunch I had a chickpea salad sandwich on whole wheat bread.

I would have added some lettuce or sprouts, but we were out. Grocery shopping is on the list for this evening.

Hubby brought home an Impossible Whopper for dinner. No pictures, but made with only lettuce, tomatoes and ketchup.

Plus, I got some walking in. It’s spring! Which means it hits in the mid to high 80’s here in south central Florida.
