Today’s brunch. I have been missing my potatoes and bok choy (can’t find any at the moment) so I improvised. I took diced peppers and onions, and sliced mushrooms, and fried them up with potatoes. I seasoned it simply with a touch of salt and a whole lot of pepper (I LOVE pepper!) and voila! It hit the spot.

Served it with a cup of orange spice herbal tea. Delicious! As usual, I could only eat half, so I have a ready made breakfast for tomorrow!

I really have to catch y’all up on what’s been going on in my life, but that’s for another post.

Sometimes ya just gotta…

Chipotle’s was on the menu tonight. Brown rice, black beans, sautéed veggies, pico and corn, topped with lettuce and their famous guacamole.

Once in awhile, we deserve a night without cooking. And this is delicious!

I’m back! After breaking down in Loxley, Alabama, we made it to our destination a couple of weeks ago. We then sold our vehicle as is and bought a new one. We’re still settling in, but I’m hoping I can share more meals and tips with you on a more regular schedule once again.

Tonight’s dinner doesn’t look like much, but it sure was good! And I love being able to eat healthy meals once again after almost 2 weeks on the road.

This is just cabbage and lettuce with rice, black beans mixed with pico, guacamole and a bit of Caesar dressing. It looks like more than I actually used. Cameras can be deceiving.

As usual, I couldn’t eat it all. I always make too much. But it will be a great snack later.

Dinner is farro and stir fried veggies to which I added some white beans. Simple seasoning of garlic, onion powder and a little turmeric and pepper. I cooked the farro in veggie broth for more flavor. It turned out quite good. But then again, I like simple meals.

Spent the morning at yet another doctor appointment. They’re ordering an iron infusion….again. Perhaps one of the reasons I’m so fatigued. And I am having 2 specialized blood tests to check for pancreatic cancer. This has been a long, hard road. Perhaps we’re seeing the light at the end of the tunnel.

What I eat on a typical day

I started out with leftover colcannon. Love this simple meal of cabbage and potatoes.

Lunch was a 6″ Subway Veggie Delight no cheese. I load it up with all the vegetables. Spinach, lettuce, tomato, red onion, black olives, banana peppers. All on wheat bread.

Dinner was mac and cheese with summer squash, zucchini, and onions. Of course all vegan and oil free.

I love simple meals that are filling and delicious.

What I ate today

I woke up late today. I usually don’t eat right when I get up, so lunch was my first meal. I made a stirfried rice with peppers, mushrooms, green onions, baked tofu, and corn. I used garlic, ginger, turmeric, onion powder, and kelp flakes for seasoning and had a little Trader Joe’s soyaki on it. Quite good!

Dinner was grilled polenta with a sauce of zucchini, eggplant, tomatoes, mushrooms and onions cooked in passada. This was really delicious! Best part is there are leftovers of the sauce I’ll be using with pasta tomorrow. Love leftovers!

I’ll probably have a potato with a little dressing before I go to bed.

My day of simple vegan meals…

Breakfast was simply grits and greens, in this case, spinach, flavored with a little salsa. Quite good!

Dinner is my Mediterranean salad. Lettuce, farro, chickpeas, olives, red onions, roasted red peppers, tomatoes, artichoke hearts and banana peppers. I don’t think I forgot to list anything! I have a fat free Italian dressing on it. Delicious! One of my favorites!

It’s starting to cool off here in Colorado. Time for a delicious autumn soup!

Fresh from my instant pot. A combo of onions, celery, carrots, lentils, farro and spinach cooked in 8 cups of vegetable broth and seasoned with garlic and herbs de Provence. Perfect for a fall night. Extremely healthy, so filling, and always vegan.

I almost forgot this!

I loved tonight’s dinner. It was a one-pot instant pot dinner.

It might look like a hot mess, but it was delicious! I had a blend of eggplant, tomatoes, onions, zucchini and yellow squash I had cooked up a couple of days ago. I put it in my instant pot along with a jar of Trader Joe’s fat free pasta sauce, a box of chickpea fusilli from Thrive Market, a bag of frozen artichoke hearts and I threw in the rest of my fresh grape tomatoes.

So easy and so good! The best part is leftovers!

And totally unrelated, but a happy birthday in heaven to my Junior tomorrow. He would have been 44.

Breakfast was my favorite potatoes with bok choy and fat-free no-cheese sauce.

Dinner is a veggie sandwich. I pickled the onions and cucumbers, roasted crimini mushrooms, and added broccoli sprouts and Trader Joe’s fat-free eggplant hummus to the 22 seed whole grain bread. Also having these just beets, also from TJ’s. Delicious, uber heathy and, as always, vegan.

Next week I’ll show you all my new plants! I’ve got romaine growing from kitchen scraps!
