It’s been a ride! But hopefully I can get back to posting what I eat vegan to try to stay healthy. Not everything is perfect, but I keep trying.
I’m trying to have more protein in the morning. This is the only protein shake I like. And it’s pretty good. I start the day with it and I’m good to go til lunch. I’m not much of a breakfast eater anyway, unless it’s brunch.
I love potatoes. A simple lunch with Chick-fil-a Polynesian sauce I found at my local Detwiler’s. It’s a Mennonite grocery store here in the Sarasota area.
I forgot to take a picture before I began to eat this Impossible Whopper. Only has lettuce and ketchup. We had to go grocery shopping and we were hungry. But I can still not eat a whole one. Hubby always finishes mine.
Sorry I’ve missed the past 2 weeks. I had a horrible case of bronchitis that wouldn’t let go and refused to leave. I’m better now but hubby is displaying symptoms, so we went this morning for yet another covid test. We won’t get the results for a day or two.
Meanwhile, I tweaked my diet just a touch. I have lowered my starchy veggie intake and raised my protein and fats. So far, the effects on my blood sugar have been great! I can’t say that I went vegan keto, because I don’t think I like 70% fat. It’s probably more like the old 30/30/40. I haven’t calculated it and don’t really plan to. I will still eat my starches, just not as much, as you will see here.
I just had an Orgain protein drink (not shown) for breakfast. Hubby and I went to Sarasota Vegan Deli to pick up and take home this sandwich they call the McBluffin. Just Egg, Beyond Sausage, and Follow Your Heart Provolone cheese. Delicious, but I could only eat about 3/4 of it. Good thing hubby was hungry.
This was a tasty snack. I also had a few calamata olives and a few bites of vegan cheese later for another snack.
Dinner was this tempeh bacon, lettuce, cabbage, avocado and tomato salad. Hubby just had blts. I wanted to avoid the bread on this one. It’s really, really good!
The only time my blood sugar went above 300 (not good) was after the sandwich. This discovery is going to help, I’m sure. I will keep you posted.
Sorry I didn’t post for the first Wednesday of the new year, but it was hibby’s birthday and truth be told I forgot.
Today is a simple what I ate.
Breakfast was a vegan Spanish tortilla to which I added broccoli and onions. That and potatoes with bok choy and vegan cheese sauce are my go-tos for breakfast because I hate sweet.
Then there was simple potatoes seasoned with garlic and onion powders. I was going to fix more, but I have been sick. Good news is it isn’t covid. Bad news is that means I probably have the flu. So now I am going to put myself to bed.
The last blog of 2021! Can you believe it? Are you ready for 2022?
As you know, I have been feeling a bit under the weather lately. So I have been trying to create nourishing food that is still simple to make.
This is a stew of sorts. I used some Gardein frozen crumbles, frozen peas and carrots, Thrive brand marinara sauce, a pint of grape tomatoes, one summer squash and one zucchini. 2 jars of water and one cup of macaroni noodles. Cooked til done. I didn’t even add any seasoning. It turned out much tastier than I expected, yet mild enough for my tender tummy.
I don’t do resolutions. I like goals. They are flexible and fail proof. I set a goal and just work on it until it is accomplished. No guilt or shame.
This year my goals are to study my scriptures more in depth, to learn to play my guitar better, and to up my daily steps.
I almost didn’t post today. As I have said earlier, I’m going through some stuff.
But my diet is still good. I had a piece of Spanish tortilla for brunch. It’s just hashbrowns baked together with onions and an egg substitute. I use Just Egg, but you can use a chickpea egg as well. Season as you like, mix together in a casserole dish and bake at 375° F for 50 minutes or until a knife inserted comes clean. It’s so good!
This is my evening snack. Avocado toast. I haven’t had this for quite awhile. I forgot how tasty it is. I added grape tomatoes and everything seasoning on Dave’s Killer bread. Simple and yum!
Today’s brunch. I have been missing my potatoes and bok choy (can’t find any at the moment) so I improvised. I took diced peppers and onions, and sliced mushrooms, and fried them up with potatoes. I seasoned it simply with a touch of salt and a whole lot of pepper (I LOVE pepper!) and voila! It hit the spot.
Served it with a cup of orange spice herbal tea. Delicious! As usual, I could only eat half, so I have a ready made breakfast for tomorrow!
I really have to catch y’all up on what’s been going on in my life, but that’s for another post.

Today’s dinner was a treat. Well-deserved after the last three weeks. I know I keep saying I’ll update you. Perhaps tomorrow.
This is a vegan calzone from Mellow Mushroom. You get to “build” your own. Mine has Follow Your Heart vegan cheese, spinach, mushrooms, calamata olives, artichoke hearts, green bell peppers, onions, roasted tomatoes and roasted red peppers. It comes with a side of marinara and it is beyond delicious!
You can see I was only able to eat a quarter of it. But that’s fine. Leftovers!
