What I ate for lunch and an update.

Had a bowl of leftover pasta with marinara, mushrooms, olives, and topped with some plant based cheese sauce and hemp seeds. It’s always better the next day! Had leftover veggie stew for dinner over a bed of rice. Sorry, no picture.

The reason for the leftovers was that I had an endoscopy yesterday and didn’t feel like cooking. I have to wait for the biopsy results, but it seems my stomach is too close to my esophagus and I have bile pooling up in it causing extreme pain. I guess bile burns the esophagus. It does for me. I have aspirated about half a dozen times since October and that’s bad. I don’t like not being able to breathe and it burns! With the right intervention I might finally be able to get this under control.

June is a really hard month for me, so I apologize that I haven’t been very consistent this month. I have health issues and grief issues. And I know they are intertwined. But I keep pushing forward because what else is there to do? I wake up every morning despite my emotional or physical state. My mind doesn’t stop even when my body does. I learned many years ago that sometimes, even having enough energy to dust the window sill is a victory.

This past week, we had no power except to our refrigerator and microwave. I’m grateful we have a gas stove and water heater. Nonetheless, it was hot and I didn’t feel like cooking. One of the things I did was buy precooked pasta, and made this delicious salad.

It has carrots, mushrooms, black olives and celery, dressed with a fat free Italian dressing. We’ve been eating a lot of salads lately. Our power was off for almost a week, and has been back on since Saturday, but we’re having record highs. Loving the simplicity of just grabbing a handful of greens and tossing them together with a few fresh veggies.

Honoring my parents, brother, nephew, grandfather, great-grandfather, and every generation back to before the American Revolution. All served in the military. Wish I had photos of all of them in uniform to share.

Tonight was spaghetti of sorts. Using up the open box of linguini. And to the sauce I added tvp, eggplant, zucchini, and mushrooms. Simple but good.

I almost forgot this!

I loved tonight’s dinner. It was a one-pot instant pot dinner.

It might look like a hot mess, but it was delicious! I had a blend of eggplant, tomatoes, onions, zucchini and yellow squash I had cooked up a couple of days ago. I put it in my instant pot along with a jar of Trader Joe’s fat free pasta sauce, a box of chickpea fusilli from Thrive Market, a bag of frozen artichoke hearts and I threw in the rest of my fresh grape tomatoes.

So easy and so good! The best part is leftovers!

And totally unrelated, but a happy birthday in heaven to my Junior tomorrow. He would have been 44.

Lunch was this fabulous Mexican veggie bowl, with Spanish rice, pinto beans, summer squash, mushrooms, grilled bell peppers and onions, chopped tomatoes, with two slices of avocado to top it off. Delicious!

Dinner is leftovers…pasta and mixed veggies in marinara sauce. Always better the next day!

Always vegan, always good!

Sorry about last week. I cracked a rib and was quite miserable. Still sore, but doing better.

I don’t like sweet, but I bought this on someone’s recommendation. I usually have my potatoes and bok choy for breakfast, but hubby was sick and sleeping on the couch. As we live in an rv, I didn’t want to wake him up by making breakfast, so I decided to try this. It tastes like the Girl Scouts thin mint cookie. I wouldn’t want this very often, but it was vegan and easy. And not too bad.

Lunch was leftover angel hair pasta with marinara and garden veggies.

Dinner is a veggie sandwich on a wheat roll, complete with tomatoes, lettuce, banana peppers, red onion, and black olives. It also has mustard and guacamole. Delicious!

I was going to post my steps, but forgot to get the screenshot. I’ve been averaging about 5000 steps per day. Not bad for not even being able to walk 3 months ago.

Starting the day right. Black bean and quinoa bowl with butternut squash, carrots, onions, and kale.

Having a veggie sandwich for lunch; hummus, heirloom tomatoes, tofu and broccoli sprouts.

Dinner will probably be a simple pasta with marinara sauce.

And I’m still walking. Getting my day started early. Already have so much accomplished.
